1.0+final is an option too :D

$ rpmvercmp libtheora-1.0.beta2 libtheora-1.0+final
:libtheora-1.0+final-0 is newer

But 1.0-0 works, even though it's a bit unusual:
$ rpmvercmp libtheora-1.0.beta2 libtheora-1.0-0
:libtheora-1.0-0-0 is newer
